Website Wednesday - Bake It In a Cake

I am a lover of all things cakey.
Cupcakes, Cakes, Cookies, Pies, Tarts, you name it, I LOVE it.
So when I found today's website during my weekly blog surfings,
I literally jumped for joy and let out a girly squeal!

Make It Monday - Homemade Flour Tortillas

I LOVE Mexican Food.
That may be an understatement, really I love it.
The spices, the flavors, the meat, and especially a good tortilla!
So, today I thought I would share my favorite tortilla recipe.
Enjoy!

Homemade Flour Tortillas

Ingredients:
  • 2-½ cups All-purpose Flour
  • 2-½ teaspoons Baking Powder
  • 1 teaspoon Kosher Salt
  • ½ cups Lard Or Vegetable Shortening
  • 2 Tablespoons (additional) Lard Or Vegetable Shortening
  • 1 cup Hot Water

Preparation Instructions:

Combine flour, baking powder and salt in a large wooden bowl. Stir together.

Add spoonfuls of lard or shortening (use 1/2 cup PLUS 2 tablespoons), then use a pastry cutter to combine the ingredients. Cut mixture until it resembles coarse crumbs.

Slowly pour in hot water, stirring to bring mixture together. Lightly knead dough 30 to 40 times, or until it becomes a cohesive ball of dough and is less sticky. Cover with a tea towel and allow dough to rest for at least an hour.

Roll into ping pong size balls, place on a tray, cover with a tea towel, and allow to rest for another 20 to 30 minutes.

When you’re ready to make the tortillas, head a dark or cast iron griddle to medium/medium-high heat. One by one, roll out balls of dough until very, very thin. Throw tortillas (one by one) onto the griddle. Cook on each side for 20 to 30 seconds, removing while tortillas are still soft but slightly brown in spots. Remove and stack tortillas, and cover with a towel to keep warm. Serve immediately or allow to cool before storing tortillas in a container. To warm, nuke tortillas in the microwave, or wrap in foil and warm in the oven.

Make It Monday - Homeade Taquitos with Avocado Salsa

This recipe is from one of my Mom's good friends.
She was our neighbor for a while and taught us how to make these.
I really hope you try them, they are my family's favorite!

Ingredients:

Taquitos:
20 - 25 Corn Tortillas
1 can refried beans
Enough Vegetable Oil to fill a skillet halfway, to fry the taquitos

Avocado Salsa:
1 Avocado
7-8 Tomatillos
1 Jalepeno
Salt to taste

Other toppings:
Sour Cream
Queso Fresco cheese - will be located near other cheeses at your local grocer, grated
Lettuce, chopped

Directions:
1- Heat oil in skillet until hot enough to fry in.
2 - Take half of your corn tortillas and place them in the microwave.
Heat them for a full 45 seconds, or until they are too hot to handle.
This will make them pliable and easy to roll.
3 - Place a small strip of refried beans down the center of one of the tortillas.
Roll tightly and place fold down in the oil.
4 - Fry until crispy on one side, then flip and fry until crispy on the other side.
5- Drain on paper towel.
6 - Repeat with other tortillas and beans.

For the salsa:
1 - Take the skin off the Avacado and remove the pit, place in blender.
2 - Remove outer casing and wash each tomaltillo, place in blender.
3 - Cut top off of Jalepeno and remove seeds, {leave a few if you like it hot!}, place in blender.
4 - Add salt and small amout of water.
5 - Blend until smooth.

Plating:
Take a Taquito and top with sour cream, then Avocado Salsa, then cheese, then lettuce.
