Make It Monday - Shrimp and Asparagus Pasta - 5/10/10

Today's recipe quickly became one of my favorites.
It is delish!
I took away and added a few things from the original recipe.
Make it how you like, and enjoy!


Shrimp and Asparagus Pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • pinch of red pepper flakes
  • 1 cup vegetable stock
  • 1/2 lb asparagus, trimmed, cut into 1/4-inch pieces
  • 1 lb large shrimp, peeled, deveined
  • 2 tbsp lemon juice
  • salt to taste
  • 1 box (14-oz) linguine, spaghetti, or fettuccini pasta
  • Italian Parsley, chopped, garnish
  • Parmesan, optional
Add the olive oil, garlic, and red pepper to a large saucepan over medium heat. When the garlic begins to sizzle, cook for 1 minute, and then add the red pepper flakes, and stock. When it comes to a simmer, add the asparagus and cook for 1 minute. Add the shrimp and lemon juice, and cook for 3-4 minutes, or until done. Taste and add salt if needed.

Boil the pasta at the same time you are making the sauce, according to the directions on the package. Drain, but do not rinse. Add the pasta back in to the pot it was cooked, and pour over the sauce. Toss with tongs to coat the pasta; cover, and let sit for 2 minutes to absorb the flavors. Serve hot topped with Parsley and Parmesan if desired.

Super Saturday - 5/8/10

Before Monday rolls around,
I thought I would post some of my recent project list/craft completions.

I finished my baby girl's first ever dress made by me,
a One Hour Sundress - Tutorial @ From an IglooFor my son's 4th birthday I made Spiderman sugar cookies
inspired by Bridget at Bake at 350.
My favorite part was flooding the cookies!
Next time I will probably do the black first, then flood the cookies with red.
I still loved how they turned out!
It was good practice, and TONS of fun!
These cookies ended up as the "thank yous" in the goody bags.
One other craft that I loved and used for my son's birthday,
were red pom poms inspired by Jill at Homemade by Jill.
She used the Martha Stewart tutorial.
They turned out great.
I originally had some already made by a friend,
and I made one more for practice and fun!
The added a little somethin' to the party!
I have many more projects up my sleeve!

Apology

This week has been crazy!
After coming home from vacation
my baby girl got her 3rd ear infection!!
So she has been horrible sick these last few days.
To add to the craziness, my son's 4th birthday was Wednesday,
and since then I have been planning and preparing for his party this Saturday.
It's been busy crazy for me!
I apologize for negelecting this beautiful little craft blog of mine..

Make it Monday - Turkey Pesto Sandwhich -5/3/10

Today's recipe is one of my favorites.
Thanks to my Mother in Law, this is a go to lunch around our house!
I hope it becomes something you love.

Turkey Pesto Sandwhich on Ciabatta

Ingredients:
(Makings for 1 sandwhich)
3-4 slices of deli turkey
2 slices of provolone cheese
1 Tbs pesto
1 Tbs marinara
sliced tomato
lettuce leaves
ciabatta roll

Take the roll and cut it in half.
On one side of the halves spread the pesto.
On the other side of bread spread the marinara.
Layer the turkey, provolone, lettuce and tomato.
Heat in microwave for 10-15 seconds.
Enjoy!

Vacation

My parents have rented this beach house for our entire family.
My 5 sisters, our hubbys, my parents, and our kids
will all be enjoying fun in the sun!
We will be leaving soon.
In order to safeguard our lives and home I won't say when,
or mention where we will be going,
but I will be taking this whole week off of posting here at A Daily Post!
We definitely plan to thoroughly enjoy ourselves
and when I get back be prepared for more food, tutorials, and craftiness!
