Make It Monday - Raspberry Cream Smoothie

I'm back!! Have you missed me?
I have missed you, and this simple, organized blog of mine.
I do have a good excuse though...that's right readers, I am pregnant!
Baby #3 is due October 14th, and my husband and I are SO happy!

I haven't been getting on the computer much because I have been so sick...
so neglecting this blog was the result.

But I am back, here for good, and hoping to spice up your foodie/crafty life
with some fun recipes and tuts I have found recently.

Today's recipe is simple, delicious, and perfect for nauseated Moms like me.

Raspberry Cream Smoothie

Ingredients:
  • 2 cups orange juice
  • 2 cups fat-free reduced-sugar raspberry yogurt
  • 2 cups frozen vanilla yogurt
  • 2 small ripe bananas, cut into chunks and frozen (1 cup)
  • 3 cups frozen raspberries
  • 2 teaspoons vanilla extract
Preparation:
  • In a blender or food processor, cover and process the ingredients in batches until blended. Stir if necessary. Pour into chilled glasses; serve immediately. Yield: 6 servings.

Website Wednesday - Bake It In a Cake

I am a lover of all things cakey.
Cupcakes, Cakes, Cookies, Pies, Tarts, you name it, I LOVE it.
So when I found today's website during my weekly blog surfings,
I literally jumped for joy and let out a girly squeal!

Make It Monday - Homemade Flour Tortillas

I LOVE Mexican Food.
That may be an understatement, really I love it.
The spices, the flavors, the meat, and especially a good tortilla!
So, today I thought I would share my favorite tortilla recipe.
Enjoy!

Homemade Flour Tortillas

Ingredients:
  • 2-½ cups All-purpose Flour
  • 2-½ teaspoons Baking Powder
  • 1 teaspoon Kosher Salt
  • ½ cups Lard Or Vegetable Shortening
  • 2 Tablespoons (additional) Lard Or Vegetable Shortening
  • 1 cup Hot Water

Preparation Instructions:

Combine flour, baking powder and salt in a large wooden bowl. Stir together.

Add spoonfuls of lard or shortening (use 1/2 cup PLUS 2 tablespoons), then use a pastry cutter to combine the ingredients. Cut mixture until it resembles coarse crumbs.

Slowly pour in hot water, stirring to bring mixture together. Lightly knead dough 30 to 40 times, or until it becomes a cohesive ball of dough and is less sticky. Cover with a tea towel and allow dough to rest for at least an hour.

Roll into ping pong size balls, place on a tray, cover with a tea towel, and allow to rest for another 20 to 30 minutes.

When you’re ready to make the tortillas, head a dark or cast iron griddle to medium/medium-high heat. One by one, roll out balls of dough until very, very thin. Throw tortillas (one by one) onto the griddle. Cook on each side for 20 to 30 seconds, removing while tortillas are still soft but slightly brown in spots. Remove and stack tortillas, and cover with a towel to keep warm. Serve immediately or allow to cool before storing tortillas in a container. To warm, nuke tortillas in the microwave, or wrap in foil and warm in the oven.
