Happy Monday everyone!
I apologize for not posting on Friday, but I really didn't have any completed projects to post.
I am planning on getting a bunch of crafting done this week,
so be prepared for some totally awesome and completed projects this Friday!
Onto today's recipe.
Yesterday was my friend's birthday.
I wanted to make her something sweet and delicious,
and didn't want to do the same old, cupcake or cake.
So I decided to try my hand at a recipe I saw on Food Network,
but do it my way...
The recipe is an Apple Spice Bread recipe, with diced apples added,
and then turned into a Donut Muffin by adding butter and sugar to the outside.
They are HEAVEN in a little muffin.
Here's the recipe:
Apple Spice Donut Muffins1 1/4 c. applesauce
1 c. sugar
1/2 c. vegetable oil
2 eggs
3 Tbs. milk
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. salt
1/4 tsp allspice
1 1/2 cups apples, diced very small
1 stick of butter melted
Cinnamon/Sugar Mixture:
8 Tbs. sugar
1 1/2 tbs cinnamon
- Heat oven to 350 degrees, and grease your muffin pan.
- Combine applesauce, sugar, oil, eggs, and milk. Mix well.
- Add flour baking soda, baking powder, nutmeg, salt, and allspice.
Mix until smooth.
- Scoop and fill muffin tin 2/3 of the way full for each muffin.
- Bake for 25 min, or until muffins are golden brown.
{Here comes the "donut" part!}-Once they are finished and still warm,
dip the muffins in melted butter and then roll in cinnamon and sugar mixture.
-Let them sit until they dry.
